Pancakes

  • 135 g all-purpose flour 1 cup
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tbsp brown sugar
  • 130 ml milk ½ cup
  • 1 large egg
  • 2 tbsp melted unsalted butter plus extra for cooking
  • 250 g fresh blueberries 1 ½ cups

Chocolate Ganache

  • 50 g unsalted butter 3 ½ tbsp
  • 150 ml double cream ⅔ cup
  • 3 heaped tbsp Nutella or 50 gr chocolate

Berry Sauce

  • 300 gr mixed berries, fresh or frozen 10 oz
  • 3 tbsp brown sugar
  • 2 tbsp corn starch
  • 1 tbsp lemon juice

Instructions
 

Pancake Method:

  • Mix flour, baking powder, and salt in a large bowl until well combined.
    135 g all-purpose flour, 1 tsp baking powder, ½ tsp salt
  • In another bowl, whisk the egg, brown sugar, and melted butter until smooth.
    2 tbsp brown sugar, 1 large egg, 2 tbsp melted unsalted butter
  • Blend the milk and blueberries together in a blender until smooth and creamy. Pour this blueberry milk mixture into the egg mixture, stirring until fully incorporated.
    130 ml milk, 250 g fresh blueberries
  • Gradually add the dry ingredients to the wet mixture. Using a hand mixer, beat the batter until it’s thick and smooth. Let the batter rest for about 5–10 minutes to ensure the pancakes cook evenly.
  • Heat a non-stick frying pan over medium heat and add a small amount of butter. When the butter is melted, add a ladle of batter. Cook until bubbles form on the surface, then flip and cook until both sides are golden brown. The pancakes should rise to about 1cm (½ in) thick.
  • Continue cooking until all batter is used, adding a little butter between batches if necessary.
  • Serve the pancakes fresh from the pan with a topping of your choice, such as fresh fruit, chocolate ganache, and berry sauce.

Chocolate Ganache:

  • In a small saucepan, combine the butter, double cream, and Nutella.
    50 g unsalted butter, 150 ml double cream, 3 heaped tbsp Nutella
  • Place over medium heat, stirring constantly until the butter has melted and the ganache is smooth and glossy, about 2–3 minutes.
  • Remove from heat and let cool slightly. The ganache should be pourable but thick enough to coat the pancakes nicely.

Berry Sauce:

  • Combine all berries, brown sugar, corn starch, and lemon juice in a pan and cook over medium heat.
    3 tbsp brown sugar, 2 tbsp corn starch, 1 tbsp lemon juice
  • Stir frequently until the berries soften, the sugar melts, and the sauce thickens slightly, about 5–7 minutes.
  • Remove from heat and allow the sauce to cool for a few minutes. This will help it thicken up, making it easier to drizzle over your pancake stack.
