Pro Tip

To avoid streaky chocolate, make sure your strawberries are completely dry. Any moisture will prevent the chocolate from sticking properly.

Substitutions

  • Dark chocolate: Use semi-sweet or milk chocolate if you prefer something less intense.
  • White chocolate: You can use dairy-free white chocolate or skip it altogether for a fully dark chocolate coating.
  • Food colouring: Leave it out if you prefer a more natural look or if you’re using coloured sprinkles instead.
  • Strawberries: If strawberries aren’t in season, you can use other fruits like bananas, pineapple chunks, or even dried fruits.

Variations

  • Nutty: Roll the freshly dipped strawberries in crushed nuts like almonds or hazelnuts for a crunchy finish.
  • Drizzle: Once the chocolate has set, drizzle the opposite type of chocolate (dark over white, or white over dark) in thin lines for an elegant look.
  • Flavoured Chocolate: Use flavoured chocolate, such as mint or orange, to give your strawberries a unique twist.
  • Add Toppings: Dust with crushed cookies, coconut flakes, or even edible glitter to elevate the look and taste.

FAQs

How long do chocolate-covered strawberries last?
Chocolate-covered strawberries are best eaten within 24 hours, but they can last up to 48 hours if stored in the refrigerator.

Can I freeze chocolate-covered strawberries?
Yes, but the strawberries may become mushy once thawed. Freeze them in a single layer, then transfer them to a freezer-safe bag. Eat them frozen for a refreshing treat.

Why is my chocolate not sticking to the strawberries?
If the strawberries are wet, the chocolate won’t stick properly. Always dry them thoroughly after rinsing.

What kind of chocolate is best?
Choose high-quality dark or white chocolate for the best result. Chocolate chips or chunks can work too, but bars of chocolate tend to melt more smoothly.

Equipment

  • Waxed paper or Cookie sheet
  • Mixing Bowls
  • Spatula or spoon
  • A piping bag or any small bag with a cleanly cut corner, free of wrinkles, will work perfectly.

Ingredients

  • 100 g dark chocolate roughly chopped, (3.5 oz)
  • 100 g white chocolate roughly chopped, (3.5 oz)
  • pink or red food colouring
  • 400 g strawberries (14 oz)

Add-Ons

  • Sprinkles, Crushed nuts (almonds, pistachios, hazelnuts), Coconut flakes, Chocolate drizzle (contrasting colour), Sea salt, Candy crumbles (Oreos, M&Ms), Granola, Edible glitter, Zest (lemon or orange), Caramel sauce, Dehydrated fruit flakes.

Instructions

  • Start by giving the strawberries a gentle rinse and patting them dry with paper towels. Next, melt the dark and white chocolate separately using a bain-marie—a method where a heatproof bowl is placed over a pot of simmering water. This ensures the chocolate melts smoothly without burning. Stir each bowl frequently until the chocolate is fully melted.

  • Now, dip some strawberries into the dark chocolate, some into the white chocolate, and others into the pink-coloured chocolate. Let any excess drip back into the bowls. For extra flair, sprinkle on your favourite decorations or sprinkles before the chocolate hardens.
  • Arrange the dipped strawberries on a waxed paper-lined cookie sheet. Place the sheet in the refrigerator, uncovered, for about 30 minutes until the chocolate firms up.
  • After the chocolate-dipped strawberries have set in the refrigerator, you can take things up a notch by adding decorative stripes. Melt a bit more of the chocolate—dark, white, or pink—and pour it into a piping bag. Cut just a small opening at the tip of the bag to create thin lines.
  • For a fun contrast, drizzle white chocolate over the dark chocolate strawberries, pink over the white, and dark chocolate over the pink. This creates beautiful striped patterns, adding an elegant and festive touch to your strawberries. Allow the drizzles to set for a few minutes, and then your striped chocolate-covered strawberries are ready to serve!
  • Once set, these colorful, chocolate-dipped strawberries are ready to serve—a sweet, eye-catching treat perfect for any celebration!

Tips and Tricks for Chocolate-Covered Strawberries

  1. Choose the Right Strawberries: Pick fresh, ripe strawberries that are firm and unblemished. They should be dry and at room temperature for better chocolate adherence.
  2. Use High-Quality Chocolate: Choose high-quality dark and white chocolate for the best result. Chocolate bars melt more smoothly than chips.
  3. Melt Chocolate Carefully: Use a microwave or double boiler to melt the chocolate. If using a microwave, melt it in short bursts of 15-30 seconds. Stir in between to prevent burning.
  4. Add Coconut Oil: Mix a teaspoon of coconut oil with the chocolate for a smoother melting process. This will give your chocolate a nice, glossy finish.
  5. Dry Strawberries Thoroughly: Ensure your strawberries are completely dry before dipping. Any moisture can cause the chocolate to seize or not stick properly.
  6. Use Wooden Sticks: Insert a wooden stick into each strawberry to make dipping easier. This will help keep your hands clean and give you better control.
  7. Create Stripes: Use a piping bag or a zip-top bag with a small corner snipped off to drizzle melted chocolate over the dipped strawberries.
  8. Chill for Better Results: After dipping, refrigerate the strawberries for about 30 minutes. This will help the chocolate set completely.
  9. Experiment with Toppings: Get creative! Add sprinkles, crushed nuts, or shredded coconut before the chocolate sets.
  10. Store Properly: Keep the chocolate-covered strawberries in an airtight container in the refrigerator. They are best enjoyed within 1-2 days for optimal freshness.
