  • 1 medium bowl

Ingredients
  

  • 450 gr cherry tomatoes red or mixed ( or 5 large tomatoes)
  • 1 medium red onion small-diced
  • 1 bell pepper chopped
  • large cucumber or 3 small ones, sliced
  • 2 tbsp white wine or balsamic vinegar
  • 2 tbsp olive oil extra virgin
  • 100 gr feta cheese cubed
  • salt to taste

Instructions
 

  • Start by halving the cherry tomatoes, and for the larger ones, cut them into six pieces. Toss them into a spacious bowl—this is where all the magic happens!

  • Next, finely chop a red onion and dice up a bell pepper and cucumber. Cube some feta cheese (you can also crumble it if you prefer) and add all of these ingredients to the bowl with the tomatoes. Drizzle in some vinegar and olive oil, then give everything a good stir to combine the flavors.
    1 medium red onion, 1 bell pepper, ⅓ large cucumber, 2 tbsp white wine, 100 gr feta cheese, 2 tbsp olive oil
  • Gently fold the ingredients together until they’re nicely mixed. If you feel it needs a little extra flavor, adjust the seasoning with salt. I usually find that the saltiness from the feta cheese is just right, but it’s always good to taste as you go!
